I've got an old vs v6 Ute, and she has started to cut out intermittently while you are driving
If you pull over, she will restart after a couple of minutes -- I dread the day she won't start again
Any tips on what the problem might be

Crank angle sensor or coil packs.
Most likely crank angle sensor. When it does it again, poor some cool water over the harmonic balancer to cool it down. If it starts straight up again yoy can be pretty sure it is the crank angle sensor. Have to remove the harmonic balancer to change the sensor.

as the man above said crank angle sensor very common especially in vs commodores

I just had the same thing with a VR, same symptons, one day didn't restart, lucky it was in the driveway. Make sure you use a genuine crank angle sensor apparently alot of the aftermarket ones don't last long
