if i change my diff gears from 2.92 to say 3.43/3.7 who or what has to be done to recalibrate the speedo

i think a lot of the place that you go to to do the conversion with do it for you
otherwise i think most tuners will be able to do it for you as its in the map

Given that it's an auto - you might want to also get your shift points altered to match the diff gears. This means taking the car to a tuner (ie not Holden).
And if you do that you may as well get a full tune while your at it...
