Agreed. The HX750 has a 7 year warranty, fully modular (best, thing, ever) plus it runs with a single 12V rail. You'll especially need the single rail as multi-rail PSUs are a PITA when it comes to beefy graphics cards and such as you have to worry about current draw per rail etc. Single rail means you just plug everything in and don't worry.
On a side-note, unless you have a crap-tonne of hard drives to go in, have you thought of downsizing to mATX? You can get all that stuff into a very compact mATX case while still having plenty of options. My current mATX case can fit 2 dual-slot full length cards in SLI, 5 fans, full-size PSU and 4 hard drives while still having a handle so I can pick it up easier than the groceries.

Firstly this is my existing multi head desktop and workspace. The displays are quite old now as it is from my original setup from over 7 years ago, the plan is to move to 3x27"WS in a 3x1 configuration and keep the existing 21"WS to go above the row of 27"WS's

Some of you guys have some massive computer setups
My current setup PC is coming up 4yrs now & looking to upgrade, basically an Intel quad core I7 2.80ghz with 12gb ram. Gigabyte Mobo.
Any recommendations for an upgrade?
I've got an i7-4770 with 16GB Ram running on an Intel Motherboard.
No point in speccing up the CPU etc. without chucking in a fast SSD.... I've got a Sandisk Extreme II 480GB SSD (boot) and a couple of 2TB Hitachi 3.5" drives for storage.
Running 8.1 which I could take or leave......

It's running on dual 24" Samsung 244T monitors which I've had for years.
If you're wanting a smaller boot drive (The 480GB SSD is worth almost $400 alone). This would be my choice:
Intel 240GB SSD 530 Series OEM SATA III 6Gb/s, 20nm
They are just over $200 and they are nice and quick. I've got this exact drive running in my Lenovo X230 i7 and it really performs well.
In terms of Storage Drives, any of the Hitachi's will do the trick, I'm running 2 of these:

I would liken this setup to a mild stroker. No it's nothing fancy and the case is incredibly boring, but it just does the job and has plenty of grunt when you need it.
I've been working with some of the 4th Generation (ie: Haswell) i5's and you could easily get away with a mid-high range i5 instead of the i7 because they really do perform quite well for most needs.....
