Transmission been serviced lately ? These symtoms can come from a malfunctioning tranny.

I would say that would depend if the fault was in the primary or secondary winding of the coils. I had a lead breaking down and there was no misfire or fault logged which would present the same as a failure in the secondary winding's of the coil as the ECU is not connected to that winding only the primary side. Not 100% sure how the ECM is wired into the primary side either so not sure if the ECM could/would detect a fault in the primary winding either. Someone else might chip in there.

Try running it with the air flow meter unplugged, see if that makes a difference. Cleaning them usually does SFA.

I have a mate with a VX ss, so I might have a day in the shed and swap a few things like AFM, tps etc. One thing I did notice is that I unplugged the pcv valve of the throttle body last night and it did not affect the engine at all, not one bit. (Not blocked as I can hear the air sucking when unplugged) is that normal? I would have thought a big vacuum leak like that would affect it??

Have you physically checked the full length of the PVC hoses and connections, especially at the rear of the intake manifold where the PVC hoses run. Common problem is a rubber joiner in the PVC hose at the rear of the Intake manifold perishes/becomes soft and leaks. That could be why there is no change when unplugging it at the front of the intake.

Yeah I plan on pulling the whole pcv plumbing off tomorrow. Be nice if it was something simple!

An ol trick with vac hose leaks is pour a small amount of fuel into a hand trigger spray bottle & carefully spray on sus vac lines whilst eng. is idling a sharp rise in rpm is generally a good indicator of where the leak is.

Lol I'll check it all out and see how we go. If I can't fix it, the whole car might get sprayed in petrol!

Pull the plugs and see if they all look the same. Might be an injector issue
